A southern, APstyle home favorite. I created this recipe because I rarely had time to allow the large meatloaf to bake. It is such a great little home cooked meal that gets everyone full. My favorite part of this meatloaf is how easy it is to get the crispy edges with a moist inside. I can't wait to see y'all recreate this for your family! Happy cooking!

INGREDIENTS:
- green pepper
- onion
- butter (2 tsp)
- 2 lb ground hamburger meat
- 2 eggs
- Hidden Valley ranch seasoning packet
- Ketchup (1 cup)
- 1 cup of oats
- Rotel drained (optional)
STEP 1: Sauté butter, chopped green pepper, and onion until softened.
STEP 2: Add sauté mixture and all other ingredients in a bowl and mix well using hands or Kitchen Aid Mixer.

STEP 3: Shape into mini loaves and add ketchup to the top.

STEP 4 : Bake at 400 degrees for 30 minutes depending on size of loaves.
