Easy summer sides

Hot summer days make me not want to heat up the kitchen with lots of simmering dishes and hot ovens. These cool, summer sides are the perfect go-to's when you don't need any more heat in the kitchen!

First, I used 2 large cans of Allen's green beans, 1 drained, and add them to a pot with some bacon, oil, and season salt. Bring it to a boil and then reduce heat and let them cook- they can cook a long time for that "almost homemade" taste.

Next, I made a fun summer Corn Salad dish. Mix together 4 cans corn, 2 cans Rotel, chopped green onions, 1 packet Ranch powder, 1 bag shredded cheddar, and 2 cups mayo, and let it sit overnight in the fridge. Crush a bag of Chili Cheese Fritos and mix in right before serving.

Then, I made a 7 layer salad. See what I mean about these cool, easy, summer dishes? Chop a head of iceberg lettuce and layer on the bottom, layer on broccoli florets, tomatoes, chopped green onions, and 1 bag frozen green peas. Top with layer of REAL Mayo (trust me and use the real stuff!), and add shredded cheddar and chopped bacon to garnish.

Lastly, and this may be the best, I made a Pina Colada Cake! This is truly a halfway homemade recipe, and aren't those the best?! I started with a coconut cake I picked up from my local grocery store bakery. Mix half a small can of pineapple juice and a can of Condensed Milk, 1/2 cup of each. Poke holes in the cake, pour on the mixture, and top with fresh coconut. Chill overnight in the fridge and garnish with fresh pineapple.
